Happy New Year! It has been a long time since I have published my popular blog What to Cook, where I give you a rundown of some of my favourite recipes of the moment. I was dealing with a lot in 2019 and needed to take a break to concentrate on myself and my family, but I am back with lots of exciting ideas for Wimbledon Mummy!
Vegan food has never been more popular than it is today. In fact, according to uk.veganuary.com, in 2019 a record breaking 250,310 people from 190 countries registered to take part in Veganuary, a month long pledge to eat a vegan diet. This month my posts will be all about embracing the vegan way of life, whether or not you are actually vegan (I personally consider myself flexitarian). There is something to suit everyone’s taste and I promise you won’t miss the meat!
So what to cook this weekend? If you normally order Thai takeaway on a Friday night, why not try BBC goodfood’s Salt & Pepper Tofu? It would be delicious served with Jasmine rice. Or maybe your looking for something hearty and comforting to eat in front of the fire? If so, Jamie Oliver’s Vegan Mac-n-Cheese is for you! My Black Bean & Brown Rice Burger with Sweet Potato Shoe String Fries would be the perfect alternative to your usual burger and fries. I also love a curry on a Friday! If you do too, I would suggest Delicious Magazine’s Vegan Coconut Curry. Serve it with some pilau rice, a naan and some poppadums and you’ll have a meal to rival any takeaway!
If you fancy something sweet, you could give Deliciously Ella’s Chocolate and Avocado Mousse a go – yum!
Are you also doing dry January of just cutting down on alcohol and fancy a delicious alcohol free drink with your meal? Try my Pink Raspberry & Tonic Mocktail (think pink gin!), my Seedlip and Palermo Dirty Martini or my current favourite low alcohol (0.5%) beer, Ghostship IPA.
