Pink Raspberry and Tonic Mocktail

If you’re a big fan of the pink gin craze which really took off in 2019, but you’re doing Dry January (or just cutting down on your alcohol consumption), this mocktail is for you! With the slight sharpness of the vinegar and the bitterness of the tonic, balanced by the sweet raspberry cordial, you won’t even notice that it doesn’t contain alcohol. Warning: drinking this mocktail may lead to waking up with a clear head, ready to face the day!

Ingredients

  • Raspberry and vanilla cordial (available at supermarkets)
  • 1 tbsp apple cider vinegar
  • Tonic water (ideally sugar free)
  • Frozen berries to garnish

Method

Measure out one shot of raspberry and vanilla cordial and add to a large wine glass. Then add the apple cider vinegar. Top with the tonic water and give the mixture a gentle stir. Add the frozen berries to garnish and serve.
