Fancy this bright pink bowl of deliciousness on a warm, sunny day? With only four ingredients, nothing could be simpler to make!
First prepare your banana ‘nice-cream’ (so called as it contains no added sugar, very little fat and calories and at least two of your five a day) by blending two frozen bananas and 1 tsp vanilla extract blended with a splash of oat milk until the consistency of soft ice cream) and frozen raspberries.
This version is coloured with pink pataya powder (which is optional) and topped with pineberries (strawberries work too!), frozen blackberries and bee pollen. Smoothie heaven! Feel free to add your own favourites – toppings like mango, granola and cacao nibs would also be delicious!
You can also scoop this into popsicle moulds for beautiful summer ice pops. Enjoy!
