We avoid processed meat in our house as much as possible, especially for the kids, as processed meat has long been linked to cancer. Luckily you can make tasty sausages yourself and avoid any added salt or nasty additives so you can rest assured you are giving your children the healthiest possible start in life.
Ingredients
• 500g lean pork mince (organic if possible but regular is fine)
• 1 onion, finely minced
• 1/2 cup bread crumbs
• 1 egg
• 1 tbsp fennel seeds
• 1 tbsp paprika
• cracked black pepper to taste
• 1 tbsp olive oil
Method
Combine all ingredients except the olive oil in a bowl and mix with your hands until combined. Form sausage mixture into sausage shapes (or any shape you prefer – feel free to get creative with cookie cutters! Just be sure to only use those cutters for meat to avoid cross contamination). Add the olive oil to a shallow frying pan and cook until thoroughly cooked through and the meat in the centre is no longer pink.
Serve the sausages cold in a lunchbox or warm them in the microwave or oven. Enjoy!
