Penne con salsiccia

This penne con salsiccia (Italian sausage) is incredibly warming, rich and so full flavoured…perfect for a cooler autumn evening. You can absolutely make it with shop bought Italian sausages, but I like to make my own sausage meat with fresh minced pork to avoid any preservatives and, bursting with fennel seeds and chilli, it’s so much tastier than shop bought as well! My recipe for fresh Italian sausage meat is coming soon!

Waitrose fig, pomegranate and lentil salad with halloumi

This salad by Waitrose makes the perfect autumn lunch! The salty halloumi compliments the sweet, fleshy figs and vibrant bursts of pomegranate and the hearty lentils give it just the right amount of bite. Served with a cool glass of white wine (for a great non-alcoholic version try Torres Natureo de-alcoholised Muscat), this is lunchtime perfection!

Fluffy pumpkin pancakes from the New York Times

Fluffy and warming with cinnamon and vanilla, these pancakes (with a cup of coffee or tea, of course!) are the cosiest way to start a cool autumn morning!

Deliciously Ella’s Spicy Lentil and Coconut Dahl

This is one of my favourite recipes of all time. It’s so completely flavourful yet so easy to make! You literally throw all the ingredients in the pot and two hours later you have the most fragrant, wonderful Dahl. Served over rice with a dollop of yoghurt (regular or plant based) and coriander and chilli flakes sprinkled over the top, this is to die for!
