I like to make meals the whole family can enjoy. It saves time as I don’t have to cook individual meals for my toddler and preschooler and helps get them used to more complex flavours. I like heat, so I add a sliced red chilli or some chilli flakes to the grown up portions as well as a little salt to taste, but it’s perfect as is for the kids and packed full of nutrition to provides lasting energy for growing little bodies!
Red lentil and sweet potato Dahl
• 1tbsp olive oil
• 1 medium red onion finely chopped
• 2 large cloves garlic
•1 med sweet potato, cut into small cubed
• 1 tbsp curry powder
• 1/2 tbsp dried coriander
• 1/2 tbsp Garaam masala
• 1 400g can plum tomatoes
• 1 cup red lentils
• 1 cup water
• Optional: dollop of coconut yoghurt and a sprinkling of chopped coriander to serve
Add the olive oil to the pan over medium/ high heat. When the oil is hot, add the onions and fry until they start to turn transparent. Add the garlic, Garaam masala and the curry powder and fry for another minute to toast the spices. Add the rest of the ingredients and give it a stir to combine. Bring to a boil, then turn down the heat and let simmer for around 30 minutes, until the lentils have soaked up most of the liquid, stirring occasionally and adding more water if necessary.
Serve over rice or quinoa and add a dollop of coconut yoghurt, sliced red chilli and a handful of chopped coriander, if desired. Enjoy!
