These oat bars are the epitome of autumn – pumpkin spice and everything nice. With no baking required they’re super easy to make and with no refined sugar they’re a healthy snack for kids and adults alike.
Servings: Makes around 14 bars
• 1 medium sweet potato, cooked
• 3 cups oats
• 6 dates
• 1/4 cup raisins
• 1/4 tsp allspice
• 1/4 tsp nutmeg
• 1/8 tsp cinnamon
Boil, steam or roast your sweet potato or save time by piercing the skin and microwaving for five minutes until very tender. Let cool and skin should peel off very easily.
Break the sweet potato into pieces and drop into a food processor. Add the rest of the ingredients except the raisins and pulse until a ball of ‘dough’ forms. If it’s too dry and crumbly, add a small amount of water, a half teaspoon at a time until the right consistency. Tip the dough out onto a board or baking sheet lined with parchment paper and fold in the raisins to distribute as evenly as possible.
Press flat and cut into a rectangular shape. Refrigerate for at least an hour to set. Cut into bars (it should make around 14).
These bars keep in the fridge for up to a week and also freeze well. Enjoy!
